Rachel created this menu to showcase what the Abibiman Project is all about.
Most people generalize Africa, not being aware that there are 54 countries, over a thousand unique tribes, languages, and diverse cultures.
Her aim is to introduce people to the diverse ingredients and palates of various regions in the hopes that down the road, people will be able to connect and cook distinct regional cuisines that diners will be able to connect with.
This menu will be accompanied by notes on each dish of its significance and origin. The story behind the food is just as important as the food on the finished plate.
